Tofu Omelette
Making an omelette from fresh tofu is easy to do. First you must buy a container or block of tofu. There are many brands to choose from, however, you want to buy one that is 'firm'. This is usually stated on the packaging. Tofu has a long shelf life unopened, just keep it in your fridge. Once opened, it is good for up to two weeks. For ease of use, I open the package, run the tofu block with cold tap water, then slice the tofu. I fry the slices I'm going to eat within a day or so, and keep the rest in an airtight container covered in cold water. You can replace the water daily, this helps to keep the tofu fresh. Tofu is protein rich, and low in sodium, and often they are fortified with calcium and extra nutrition, so check the packaging label. You can also buy organic tofu which is really good, but a tad more expensive. I usually buy whatever is available.

Selecting Our Ingredients
Tofu can easily replace protein in any daily meal, so it is a cheap and healthy food. Best of all, you can dress tofu to your liking. It pairs with just about anything because of its' mild flavour.
For this recipe, I bought a 454g block of fresh firm tofu. Then I sliced it into 5 good size slices. We require 2 slices for this recipe. We also need sesame oil, salt, green onions, 2 half slices of bacon, 1 large cremini mushroom, and, tex mex shrdded cheese - about one third cup.
Pan Fried Tofu
Once you have sliced your tofu, use a paper towel to dry them somewhat, then salt one side to your liking, and then both slices into the fry pan with the sesame oil. I like sesame because it adds flavour, but you can use any preferred oil. I added two tablespoons of the oil.
Fry each slice until the side starts to brown and get a little crispy(about 5 mins); medium high heat is good. You can fry each side or just one. Once fried remove from the pan and onto your serving plate(nuker safe). Next, add some of the Tex Mex shredded cheese. Then add the bacon slice and green onion, and the mushroom. Slice the mushrooms thinly, and divide the mushroom on the tofu slices. Then add more Tex Mex cheese to cover all the ingredients, and lastly, into the nuker for a short nuke to melt the shredded cheese. Serve with two slices of tomato on the side, optional.
Inexpensive Meal
Omelettes can be eaten at any meal of the day.

Wine Pairing For Tofu
If you want to add a wine to your meal, try a
Riesling, Chardonnay, or Sauvignon Blanc. We want one that is acidic, semi-sweet in nature, and somewhat crispy on the palette which can blend nicely with the cheesy flavourful tex mex we added to our omelette.
