Spice Cake

This recipe is for a spice cake that is made in a 8" square pan. For the cake's icing, we use a store bought cream cheese icing, which complements the spiciness of the cake. For the spice cake, we use ingredients that are mostly available from your local grocer. For the spices, we are going to add cinnamon and garam masala. You can buy cinnamon easily, however, the garam masala spice may not be at your local grocer. I bought mine at the bulk barn store here in Halifax. They have a good selection of spices, which makes it easy to try out new spices without the expense of having to buy a full bottle each time you want to try new flavours.

I use raisins in the recipe because they go nicely with the spices being added. For the raisins(sultan), you can also buy them at the bulk barn in small quantity. Applesauce is also used. It can replace eggs in your recipe, soften the texture, and add flavour. With this recipe, I use 2 applesauce cups, one to replace 1 egg(recipe actually has 3 eggs), and 1 cup to add flavour and soft texture for the cake. And, for the applesauce I buy the unsweetened cups, to reduce the sugar content of the recipe, but you can use the regular applesauce also. Grocery stores usually have both.

I make my recipes with sugar free varieties like stevia or sucralose, and add regular sugar also(good for carmelization); usually two tablespoons to a 1/4 cup of regular sugar, with the remaining being sugar free. If you want to use just regular sugar, you can replace it cup for cup for the recipe portion. The amount of sugar for this recipe is 3/4 cup.

Gather the Ingredients

This recipe has two cups of all purpose flour, and 3/4 stick of unsalted butter at room temperature. I use plant based Becel brand, but any unsalted will do fine. Applesauce cups can be bought with either sugar added or unsweetened.
Prepare the Flour Mix: We add 1/4 tsp salt to the flour along with 1 tablespoon of baking powder. The spices, 2 teaspoons garam masala, and 1/2 teaspoon cinnamon spice, are measured and added to the flour mixture also, giving them a good mix so they are well blended with the flour.
Make the Batter Mix: To prepare the batter, first add the sugar and then the butter to a large size bowl. Cream them together till fluffy, and then add the eggs(together ok), and mix all together. Next, add the 1 teaspoon vanilla extract, and then, add the applesauce cups; keep mixing for a smooth batter consistency.

Combine Batter with Flour: Next, we add the flour mix to the batter bowl, together with the half cup of milk, adding it incrementally with the flour. Mix all together, and lastly, fold in the 1/4 cup of raisins.

Ingredients For This Recipe
Oven: 375, middle rack, about 20 minutes

Add these together

2 cups of all purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
2 teaspoons garam masala spice
1/2 teaspoon cinnamon spice

Add these together

3/4 stick unsalted butter (plant or regular)
15 packets stevia(sucralose),
equals about 7 tablespoons regular sugar
1/4 cup regular sugar
2 large eggs
2 applesauce cups unsweetened
1 teaspoon vanilla
1/2 cup 2% milk

Fold these into the batter

1/4 cups sultan raisins

Garam Masala Spice

Garam masala is a common spice used in India's cuisine(meat, vegetable, fish) and can take on different flavours depending on the region it is from. It can be hot or mild, with mostly aromatic and sweet spices. The mild flavoured spice is the one I bought and added for this spice cake recipe. It has coriander, cinnamon, ginger, cloves, cumin, cardamom, black pepper, and canola oil.
When I first smelled the spice, it reminded me of cinnamon but not as sweet. The additional spices that can be added to garam masala include turmeric, saffron, fennel seeds, ginger, garlic, mustard seeds, mace, star anise, tamarind, fenugreek, and dried red chiles. Garam masala is also one of the spices used in making samosas.
